Quinoa for Breakfast

I hear Fall is in the air in other parts of the country. Florida, let me add, is not in this category. It’s still in the 90’s here with no cool breeze in sight. Just a hot, muggy, steamy, stick your face in an oven day. But… I wanted to eat a warm breakfast this morning so I chose Cinnamon & Blackberry Quinoa.

My diet is far from perfect, but I’m learning that if you surround yourself with delicious, healthy, whole ingredients you’ll discover and create amazing ways to use them.

I used red quinoa today but you can use whatever kind you prefer. Blueberries can replace the blackberries as well. I also chose coconut milk but almond, soy, or regular will work too…and so on.

1/2 cup coconut milk

1/2 cup water

1/2 cup organic quinoa

/2 teaspoon ground cinnamon

4 teaspoons organic agave nectar

1 cup blackberries

1/4 cup chopped walnuts

Pour the milk, water and quinoa in a small saucepan. Bring to a boil over high heat. Reduce heat to medium-low and then cover and simmer 15 minutes or until most of the liquid is absorbed. Turn off heat and let sit covered 5 minutes. Stir in blackberries and cinnamon. This recipe makes about 2 servings. Drizzle 1 teaspoon agave nectar over each serving and enjoy!
