Apricot Fig Glazed Pork Chops

Finally! After cough drop after cough drop, aspirins every 4 hours, and Nyquil every night, I finally feel 75% better. I was able to get up early this morning and eat the breakfast I made the night before. OOIAJ! Overnight oats in a jar!! I’ve read so many other bloggers raving about this and had the opportunity to try it after scraping the last tid bits of our Skippy jar.

I combined oats, almond milk, blueberries, and cinnamon and stashed it away in the fridge overnight. I woke up early this morning and breakfast was waiting for me.

I was a bit apprehensive about the whole idea of it but was surprised at the peanut buttery yumminess in almost every bite. Let’s just say I ate the whole thing and I can’t wait till the next peanut butter jar is empty again.
I’m shocked at the simplicity of the whole thing. And being a relatively new sleep deprived mom…simplicity freaking rocks. You can now add me to the OOIAJ fan club.

Tyler has been teething the past few days. Poor little guy… The doctor said to give him Tylenol but I don’t want to do that too often. I’m pretty sure our bodies become immune to medications if we use them too frequently. So I read up on some info about teething online and heard frozen celery aids in the teething dilemma. We tried it and Tyler seemed to like the feeling of it.

For lunch today I had toast with Laughing Cow Spreadable Cheese and a sliced tomato. I adore spreadable cheeses. They make my taste buds smile.

Todd pondered for about 2 hours on what he wanted for dinner. It first started off with steaks. Then switched to pork chops. Then to seafood and finally back to pork chops. I was happy with his decision because I wanted to use the figs I still had in the fridge. While he prepped the choppys, I made a apricot fig glaze for them. Out came a saucepan…and …

Apricot preserves, Ginger paste, Braggs,

Figs, cinnamon, cayenne pepper, and red pepper flakes.
I let the flavors simmer together…

While these bad boys (dusted in cayenne pepper and cinnamon) cooked on the grill.

All this cooking made us thirsty so we sipped on this…

Oh I can’t forget our sweet potato fries… Cut up, put on a pan covered in coconut oil then drizzled with olive oil, and sprinkled with more cayenne pepper, salt, sugar, and cinnamon.

Dinner is served!

The sweet apricot fig glaze met the spiciness of the cayenne in a clash that is indescribable. These were the tastiest pork chops I’ve sank my teeth into.
My palate is more than satisfied. A couple more beers to wash it all down and Im off to watch a movie with Todd. See ya mañana.

Get Figgy With It

Hi there… I’m behind on my blog because I caught the nasty dreaded head cold. Todd claims that it’s because of all the healthy food I eat. Ppppphhhhh! Men!

I’ve been laying low and trying to rest. Kind of hard with a 5 month old. I sure hope he doesn’t catch this cold. He’s teething and I don’t want to add any more misery to the poor little guy.

Figs are buy one get one free at Publix this week. I’ve never had them outside of their Newton clothing.

I decided to get the Sierra and the Black Mission varieties to try. They are so yummy. I prefer the Black Mission. They seem sweeter and less gummy than the Sierra variety. I had some for breakfast to go along with my almond butter toast.


I found a few smoothie recipes that I’m going to try tonight.

Banana-Fig Smoothie
– 2 bananas, peeled
– 3 fresh figs
– 2 handfuls of fresh baby spinach or other leafy green
– 4-6 ounces of water
You can also add strawberries, peaches or nectarines for a different flavor.

Until then… I’ll be popping cold meds till the sniffling and sneezing stops.

Thirsty Thursday

Waking up with a sore throat is a major bummer, therefore today I’m bummy. I slept way late today. Todd had morning shift thank goodness.


I woke up around lunch time and had the muesli I made last night for today’s breakfast. It was really good and since I was really hungry there is no picture. I mixed 1/4 cup of rolled oats, 1/2 cup almond milk, chopped almonds, chia seeds, and my home-made applesauce which consisted of 1 apple, cinnamon, and water stewed in a pot until tender. Once all that was mixed in a bowl, I threw it in the fridge and let it soak while I slept. This might be a morning breakfast ritual but next time I’ll throw in some extra fruit to garnish the top.

For lunch, I made pasta. I sautéed a plum tomato, red and green peppers, onion, mushrooms, and garlic with coconut oil while my whole wheat pasta shells were boiling. Once the veggies were tender and the pasta al dente, I mixed it all together, added organic parm cheese and a few slices of mozzarella. YUM and FRESH!

I’m craving hot and cold beverages today to coat my throat. I made some fresh juice with carrots, apples, celery, spinach, grapes, and a pluot. I love fresh juice but I’m not crazy about the mess it makes. I’m in the market for a nice juicer. Right now I have a Hamilton Beech model and I’m not thrilled with it. There are so many parts to it and it makes it difficult to clean. 8 oz of juice = 30 minutes of chopping , juicing, and cleaning. Todd walked to the fridge, poured a cup of OJ and said “Look I made myself juice.” Nice Todd… really nice! He tasted mine and decided he didn’t want to jump on my fresh juicing band wagon. That’s okay, I’ll ride it alone. My Dad loves juicing so he and I text back and forth about our concoctions. He makes juice with beets which I have yet to try. Apparently you are only supposed to add small amounts of beets to your diet at at time. He learned the hard way about that. Beet juice has a strong effect on the digestive tract. Eeeek!


After the juicing extravaganza, I pureed Tyler some yum yums. I started with an avocado.


I used 3/4 of the avocado and 1/4 cup of baby water and put it in the Baby Bullet.

I got this….Ta Da!

Since that was so much fun, I pureed a banana.


Now I have a weeks worth of baby food to get Tyler started on solids. Woot Woot!!

All that pureeing made me thirsty so I’m now coating my throat with a cold refreshing coconut water.


The rest of the day is not going to be so healthy… Since my Dad texted me a picture of him eating nachos and watching the Tampa Bay Rays, it inspired Todd and I to go get some chips to also make nachos. Ours will be topped with chicken, cheese, refried beans, salsa, jalapeño peppers, and black olives. And to wash it all down…Landshark Beer.

Laundry calls and then I’ll be looking online for some coupons and freebies. I’ll post what I find on my deals page. See you later!

Coincidence…I think not.

Do you ever dream of something and then have something like it come true the following day?


I do this often. It’s not the exact dream but I get a de ja vue because something similar from the dream will actually happen in real life. I’ve been told that I’m in tune with the universe. It’s pretty amazing. I notice little things like that. Some people may think they are coincidences but I don’t. I’m a firm believer that everything happens for a reason. I can be sitting on the couch and I’ll say a word and 2 seconds later that same word is said on the show I’m watching on the television. Does this ever happen to you?

One of my favorite books, The Celestine Prophecy, talks about this. It’s a book about an ancient Peruvian manuscript containing 9 Insights to help you achieve a fulfilling life. The author, James Redfield, gives the message to inspire people to get in touch with their life. He talks about how each coincidence is a test. You can’t learn until you pass the test. If you don’t get it the first time, you get successive opportunities, each with a firmer influence. Each time is a louder wake up call. It is up to each of us to recognize when the coincidence occurs and try to find the message that is being communicated to us. I go through these lessons all the time. If I don’t learn from the lesson then I have to experience it again until I do.
I read this book about 5 years ago and it gave me a new outlook and meaning to life. A lot has happened in 5 years so I’ve forgotten some of that meaning. I think it’s time for me to read the book again.

Today’s breakfast consisted of Greek Yogurt, blueberries, chia seeds, and Kashi cereal. I’m going to make my first Muesli for tomorrows breakfast.


For lunch I had a left over turkey burger and a salad with Annie’s Gingerly salad dressing.
I just had a Larabar for my afternoon snack and now I’m contemplating what to make for dinner.

Just Dance

How’s your Tuedsay going? I’ve been hearing thunder roll but I haven’t seen any rain. It’s just H O T!

I’m waiting for the day when I can look outside and see this…


But for now, I have to settle for this…


Being a stay at home mom, I try to find ways to save money. I collect coupons from the newspaper but most of the coupons are for things I don’t normally use. In hopes of getting coupons for things we do use…I looked in the pantry and made a list of all the brands we use and started emailing the companies. All I do is go to their site, click on contact, and then email them a comment. Some companies just send a thank you email but others either mail coupons or mail out free samples. Yesterday I got 4 coupons and a letter in the mail from YoCrunch Yogurt. Organic and natural foods aren’t cheap so I made sure to send emails to those companies too. Keeping my fingers crossed that some good coupons come my way for those items.

My legs and arms are killing me today. We got Just Dance 2 for our Nintendo Wii to help me get some cardio in while the baby naps. I have to admit I wasn’t thrilled about spending the money on the game but now that I’ve used it…I like it. It’s fun, I look silly but at least it gets my blood flowing. I’m going to try to do it every day this week.


Time for my snack. Today it’s a Doctor Kracker with avocado dip.


The dip is from the Cinch book. It has avocado, a boiled egg, lemon juice, cayene pepper and black pepper in it.


Turkey burgers stuffed with goat cheese are for dinner tonight. Here come the Yumgasms!!


Week goals?

Today I woke up knowing why my hormones have been off the charts lately. My Aunt with the last name of Flow is in town and she made me crave everything under the sun these past few days. At least I have an excuse now. I’ve been craving chocolate like crazy too. Thank goodness I had my favorite on hand. The Cinch plan allows for a square a day of 70% or more of dark chocolate. I’ve tried Godiva and Lindt and found that I love love love Green and Black’s organic bar.

We just got back from the pediatrician’s office and we got the go ahead to start Tyler on baby foods. Yippy!! Time for bibs, baby spoons, tons of picture taking and lots of clothes washing!!! He hasn’t been sleeping through the night yet. He thinks its feeding time at night and playtime during the day so I have to figure out a way to change that. He weighs a whopping 17 lbs and 11 oz. We decided to start him on avocados this week so I’ll have to make a trip to the grocery store today. I was at Whole Foods Market yesterday…too bad I didn’t grab any while I was there. It gives me a good reason to go back though. I love that store. I’m addicted to the way it smells. That may seem strange but I’m strange. 😉 Yesterday while I was there, I picked up some MaraNatha almond butter and some TerrAmazon cacao powder to go into my smoothies. I’ve already started my list for when I get a chance to go back. It’s a bit of a drive with traffic so I don’t get to go very often.



I started the day with some overnight oats. I combined almond milk, oats, greek yogurt, cinnamon, cacao powder, a banana, and chia seeds in a bowl last night and put it in the fridge for my breakfast. I didn’t care for the texture or the taste so I only could down half of it. After we got back from the pediatrician’s, I had a bowl of the quinoa salad I made a few days ago and topped it off with some chia seeds. I always forget to add the seeds to my meals so my goal this week is to remember. Do you have any recipes to used chia seeds in?

One more weekly goal is to get some exercise in. I have tried Tracy Anderson’s post-partum dvd workout but frankly…She annoys me. Shes so thin and really limber. I’d rather look at someone actually trying to lose weight and tone up… Not a Barbie look alike. (Maybe it’s Aunt Flow talking.) The exercise moves aren’t too easy either. Not really for someone who has extra poundage from eating too much during pregnancy. Any suggestions?

I hear little man stirring so it’s time for me to make his bottle. Have a great afternoon!

Just going with it

What can I say? Weekends aren’t meant for dieting. Instead of feeling guilty for over-eating I’ve decided to just go with it. Why can’t I have my grapes with a side of cake? Pppphhhh!
Apparently cake sticks to my thighs unlike grapes. But since I’m having a hard time focusing on eating “strictly healthy” on the weekends I’ll just eat in moderation if I’m tempted with dessert or cocktails or whatever…
Like yesterday, I went to Mimi’s Cafe for a birthday party. I originally was going to get a fish meal but opted for the Grilled Veggie Flatbread.


It was very tasty but I could have saved half of it for another meal but I instead ate the whole thing in one sitting. Not to mention the not so slimming birthday cake I had for dessert.


Once I was home, Todd and I started thinking about dinner. We decided on a recipe we found off another blog… “Iowa Girl Eats”… And decided to make her Apricot Glazed Goat Cheese Stuffed Turkey Burgers.


O M G!!! They were so freaking good! The problem with these are that they contain 2 proteins instead of 1. In the Cinch plan you should only have 1 produce, 1 grain, 1 lean protein, and 1 plant based fat. Bummer because the the burgers were fantastic!
But at least we decided on making a healthy meal unlike the previous night of ordering greasy pizza. To go with the burgers we grilled some zucchini and I made a quinoa salad that had corn, black beans, feta, cilantro, tomatoes, salsa, and fresh lime in it. This recipe is also from the blog “Iowa Girl Eats”.

Today is another birthday party with more cake! Ra Roh! Oh yeah… I’m just going to go with it. 🙂

Tomorrow we have our pediatrician appointment for Tyler. I’m wondering if the doc is going to give us the go ahead on starting him out on baby food. If so, I’m ready. We just bought the Baby Bullet so I can make him fresh organic foods. We shall see!
